Description

Utskho-suneli is a traditional spice of Georgia. In many languages, blue fenugreek is called differently, but all names contain the epithets blue or fragrant. It should be noted that blue fenugreek and Greek fenugreek, which is also called fenugreek or shamballa, are completely different plants. The North-West Caucasus is considered the birthplace of blue fenugreek. It is found in Southern Europe, Asia Minor, Crimea, and the Balkans. Translated from Georgian, “utskho” means foreign, which means that the spice came from the cuisine of another country, most likely Iranian. But UTSKHO-SUNELI, translated from the same Georgian language, can be translated as “suddenly smelled”, which indicates the hidden aroma of the plant, which appears only after drying. Utskho-suneli are the seeds of dry grass, similar to clover with blue flowers . The annual plant has a straight trunk directed upward. It blooms once a year, in May-June. The inflorescences contain a spherical bean-like fruit, twice as long as the calyx. The seeds are located in the fragile seed capsule of blue fenugreek (trefoil, gunba, blue clover, blue goat's trefoil). The grains resemble small wheat. Fresh grass does not have a strong odor. After drying and calcining in a frying pan, it reveals a strong spicy aroma. The taste of utskho-suneli is sweetish, nutty with bitterness, and the aroma is tart, refreshing. Application: The spice evens out the spicy taste of dishes, reduces the hotness of pepper, regulates the sweetness of paprika. Dried blue fenugreek seeds are used in Switzerland: the famous Swiss green cheeses are made with the addition of this spice. Lenten soups are enriched with the smell of chicken broth. Pickles acquire a crunchy structure and rich aroma. Combines with coriander, garlic, savory, cilantro, red pepper. Added to dishes with the following foods: poultry, lamb, basturma, fish. , lobio, adjika, vegetable stews, pickled zucchini, cucumbers, green tomatoes, sauerkraut Complements utskho-suneli first courses, kharcho, seafood (especially shrimp and mussels in tomato), sauces, spicy sauces, bread, buns Add blue fenugreek to the famous Svan salt (svanuri marili) A pinch of utskho-suneli provides the dish with a nutty flavor, a sense of richness, and piquancy.
