Description
Chocolate discs for coating confectionery products. Used for casting chocolate figures of any complexity, coating confectionery, making chocolates, fondue, chocolate fountain, hot chocolate.
Composition
Cocoa mass 60%, sugar 30%, cocoa powder 8%, cocoa butter 34-36%, emulsifier: soy lecithin, natural vanilla flavor.
Technological recommendations for use
Heat the required amount of chocolate in a water bath at a temperature of 45°C or in a microwave oven at 500W. Temper and use at 29-31°C. Crystallization at 10-15°C for 15 minutes. Avoid mixing chocolate with icing and chocolate substitutes.
