Pilaf is the national dish of the Uzbeks, Turkmens, Tajiks and other peoples of Central Asia. But we also really liked it in our kitchen. Every housewife has cooked it at least once. Maybe it doesn’t turn out the same as real Uzbek or Tajik, but adding a special seasoning “for pilaf” to it will turn out better and better.

Pilaf will not turn out to be pilaf if you do not add spices to it. It will be ordinary porridge with meat. The whole essence, the whole highlight is in the correctly selected spices. Barberry will complement it with light sourness. Chili and black peppers will add spiciness. Turmeric will give you an incredibly beautiful golden hue. And marjoram and cumin are real oriental notes.

It is better to store the jar of seasonings tightly closed so that the aromas do not evaporate.

It is interesting to know that in 2016 UNESCO recognized pilaf as a national intangible cultural heritage.
