Description
Pink peppercorns are the fruits of a tree of the genus Schinus molle of the Sumacaceae family, which when dried are used as a spice like black pepper. The sweetish-pepper taste and aroma of pink pepper is reminiscent of ginger, but at the same time it is softer, without excessive spiciness, with mildly spicy notes of anise, menthol, raisins, citrus and juniper. The fruits are shiny round, 3-5 mm in diameter, with one woody seed, initially green, then turning red pink or purplish. Due to its mild taste and aroma, as well as the lack of heat, it is suitable for almost all products. Both whole and ground pink peppercorns are used in cooking. It is often included in mixtures such as “Four Peppers” along with black, white and green pepper. Goes well with peppers, ginger, mint, anise, calamus, cardamom, cinnamon, juniper. It can be found in marinades for meat and fish dishes, brines, raw and stewed vegetable dishes, and various drinks. Pink pepper is often added to desserts, sorbets and ice cream. Even fruit salads can be decorated with whole berries. But scallops and squid cooked with the addition of this spice, as well as suckling pig meat, are considered especially tasty.
