Black pepper contains essential and fatty oils, starch, piperine, a large amount of vitamin C, group B, carotene, as well as mineral elements: iron, phosphorus, calcium. It is added when preparing meat, fish, vegetable dishes, pies, omelets, salads, stews, pilaf, gravy, marinades, sauces, soups, borscht, canned and pickled vegetables, legumes, cheeses, sausages, pasties and many other dishes. It is part of spicy mixtures. Black pepper is consumed both whole peas and ground - both as a separate seasoning and in a variety of mixtures.
