Fenugreek - also known as fenugreek, shamballa, helba, methi, Greek hay, chaman, Greek goat trefoil, fenigreek grass, cocked hat, Greek sochevitsa, camel grass... Many names indicate its wide use in the cuisine of different countries and for different purposes. This is an annual a herbaceous plant from the legume family with small yellow flowers with a peculiar, pleasant aroma, which later become triangular-shaped pods. In cooking and medicine, the seeds are used - brown-yellow, diamond-shaped, 4-5 mm long. Their taste is bitter-sweet, nutty, and is significantly enhanced after light frying, then the seeds acquire the aroma of burnt sugar. In addition to the pleasant aroma, shambhala has a number of useful properties. Indian women, for example, to strengthen the body after childbirth, ate shamballa seeds with palm sugar or made bread with them. Even in the Koran, the Great Prophet Muhammad said: “Heal yourself with helba.” Shambhala is especially popular in oriental cuisines and in the USA, where it is added to hot sauces, snacks, and various spicy mixtures for sandwiches. Shambhala adds a nutty flavor to dishes. It is added 5-10 minutes before readiness.
