Description

The spice known as fenugreek is also sometimes called shamballa, fenigreek grass, gunba, Greek lentils, camel grass and many other options, but all the time we are talking about the usual fenugreek. It came to Southern Europe from Asia Minor and grows wild in the foothills of Turkey, Iran, Iraq and up to the Himalayas. In addition to Europe, it is grown in India, China, Egypt, Japan, Ethiopia, Tunisia, Morocco and Argentina.

Sprouted seeds are used as a base for salads in some Egyptian and Greek cuisines. While dried fenugreek is worth buying for lovers of adjika and Indian cuisine. In the latter, the grain is added directly to the frying pan in the oil before preparing sauces and gravies, including brownies, vegetable or legume dishes. It provides a pleasant taste and aroma similar to mushrooms or nuts.

Roasted seeds are also periodically added to coffee drinks. In American and Mediterranean cuisine, the spice is used in the production of confectionery and baked goods, as well as cheese. This wonderful flavoring is complemented by alcoholic beverages and maple syrup. In the Caucasus, it is found in various dishes, among which the most popular is basturma.

What does fenugreek hide?

The seeds of the plant contain many beneficial elements and antioxidant compounds that have an anti-inflammatory effect. In addition to vitamins A, B1, B2, and B9, lecithin, tannins, fatty and essential oils, it contains:

  • phosphorus;
  • zinc;
  • iron;
  • copper;
  • selenium;
  • potassium;
  • magnesium.

Additionally, it contains the alkaloid trinoneline, which prevents the degeneration of nerve cells. Chaman contains most of the amino acids that the human body needs, including L-tryptophan and lysine.

Shambhala has a characteristic, specific, persistent aroma and a sweet taste with a slight bitterness. It is often added to various mixtures such as chutney, brown or even suneli hops.
