Ingredients
Wheat flour TM Ahimsa - 170 g
Rye flour TM Ahimsa - 300 g
Dry yeast - 3 g
Refined sunflower oil - 2 tbsp.
Water - 400 ml
Rye malt - 2 tbsp.
Salt - 1 tsp.
Honey - 1 tbsp.
Dry coriander - to taste
Method of preparation:
First of all, let's brew the malt. Pour 150 ml of boiling water over the malt and stir. Set aside and let it cool slightly.
Mix the remaining 250 ml of water with honey.
Mix both types of flour, yeast, add salt, cooled malt dissolved in water and water with honey. Let's add oil there. Knead into a soft, slightly sticky dough. Place it in a bowl greased with sunflower oil. Cover with film and leave in a warm place for 1-1.5 hours. If it is very warm, the dough will rise within an hour. During this time it should increase by 2 times. Next, we crush it and place it in a mold greased or lined with parchment. Lightly brush with water and sprinkle with coriander, lightly pressing it into the dough. Cover with a towel and leave warm for 30-40 minutes.
The dough has risen again, you can bake.
We bake homemade Borodino bread in an oven preheated to 180 degrees for about 40 minutes. Cooking time will depend on your oven.

Oatmeal - carrot cookies with rye flour
Ingredients
