Description
La Molisana is not just pasta, it is the story of a family that, for four generations and more than a hundred years, carefully selects and grinds only the best varieties of wheat. The history of a land that, thanks to its undeniably superior, exclusive characteristics, is the ideal place to create a unique, refined pasta. The entire life cycle of pasta is controlled, working at three production sites: silos, mill and pasta plant. A true cult of Durum wheat, which is carefully selected in laboratories and stored in silos, ensuring that it is always as clean and healthy as it should be. A distinctive feature is the stone debranning of the grain, which ensures that the original properties of each grain remain completely intact, as they are cleaned very gently. The purest water taken from the heart of Matese, with low sodium, low fixed residue and low nitrate content, is recognized by the Molise Region Quality Water Chart as a local superior product of high quality. This is why La Molisanapasta is so good - high quality gluten content, excellent protein content - to maintain the shape and structure of the pasta and, finally, a significant yellowness index to make the pasta even more filling and appetizing in appearance. The abrasive texture of the paste, which is made using the “Bronze die” technology, gives the paste the desired roughness and promotes better penetration into the sauce.
Recognizing the increasing demands in the health food market and especially gluten intolerance, we have developed products using alternative, gluten-free flours, while maintaining the important features of classic pasta: taste and firmness.A blend of brown rice, maize and quinoa results in a pasta that boosts energy while being highly digestible and super delicious. A good percentage of brown rice ensures firmness and a warm yellow color, making it more attractive, while quinoa enriches it with a more intense flavor that's perfect for any recipe.
In addition, the rough texture, thanks to the Bronze die process, holds sauces and ensures pasta cooks al dente. A result that meets the desire for taste and well-being.
