Cumin, or Zira or Roman cumin, is a herbaceous plant, a species of the genus Cuminum. Sometimes, due to the germination of the seeds, Cumin is simply called “cumin,” although usually the word caraway means a plant of a different species (even a different genus).
The smell is strong, bitter, slightly nutty. Intensifies when grinding or roasting seeds. Zira is widely used in cooking, especially in the East. Both whole and crushed or ground cumin seeds are used. The whole seed is used in the preparation of, for example, pilaf, being, at the same time, a component that is responsible for the aroma. Ground is widely used in preparing meat dishes. Jeera seeds are found in popular Indian masala and curry mixtures. Cumin is widely used in Mexican cuisine. The fruits contain 2.4-4.0% essential oil, up to 16% gum. Cumin (Zira) has a positive effect on the cardiovascular system, prevents the formation of blood clots and protects our body from heart attacks. Consumption of spice improves brain activity and vision, promotes digestion and improves appetite. Zira strengthens the stomach and intestines; it is indispensable for stomach colic, cramps, and dyspepsia. In Greece it is used to prepare healing tea for children. It also helps with nervous exhaustion and migraines. Freshly ground cumin seeds have sedative properties and are therefore used to treat insomnia.
