What is the difference between cassia (cinnamon, which we are used to buying in stores in the form of sticks or powder) and Ceylon cinnamon? Why are the prices for these types of cinnamon so different? We will be happy to answer these questions so that you do not have any doubts. Ceylon cinnamon is produced from young shoots of the cinnamon tree, so it has a very subtle, multi-faceted aroma and a large amount of essential oils. While cassia has a fairly sharp and uniform cinnamon aroma with a slight heat, it has virtually no sweet notes. This is all due to the age and thickness of the bark, which has a small amount of essential oils. If you buy cassia in the form of sticks, you will not be able to grind it at home, since the bark is too hard. Ceylon cinnamon is perfectly ground in a mortar, mill or coffee grinder. The sticks are hand-rolled very thin, dried, then sanded and cut to a specific length. It is usually 7 or 12 cm in length. Due to the fact that Ceylon cinnamon is much more aromatic and pleasant in taste compared to cassia, it must be added at the rate of 1/3 of the amount specified in the recipe, except in cases where Ceylon cinnamon is indicated in the recipe. Thus, Ceylon cinnamon will be enough for more buns and mulled wine, and the taste of the dishes will be more subtle and refined.
