It has undergone a delicate light-medium roasting, during which time the grain is consumed, increasing in size, developing an oily surface, a light brown color and a pleasant cavoy aroma. It stands out from other varieties with a balanced rich taste, softness, fruity and flowery notes of elderberry and fresh agrus. There is a slight sourness in it. It is ideal for cooking in Turkey or French Press.
