Description

White mustard is a spice that tastes very similar to horseradish. The seeds of the plant are mainly used, table mustard is prepared from them, adding vinegar, salt, sugar and vegetable oil, sometimes various spices are added in order to give the dish additional aroma, since the seeds are devoid of any smell.

The seeds are also used to prepare a variety of spices and seasonings, vegetable dishes, soups and minced meats; sometimes they are added when canning vegetables. White mustard is also used in salads, sauces and rice dishes. However, before preparing dishes, it is necessary to roast the seeds to activate the aromatic oils in them, which will not only give the dish a nutty aroma, but also exhibit their medicinal properties. The volatile vapors released have an antibacterial effect, so mustard is used as a protective coating when cooking meat and fish; it also prevents the leakage of meat juice. This plant also contains a large amount of fatty and essential oils, which are valuable in canning and baking.

Compared to black mustard, white mustard has a more delicate and piquant taste. In cooking, mustard powder is often used for meat dishes, including poultry, and various sauces; mayonnaise is prepared using it. It should be noted that mustard powder diluted with hot water releases mustard oil with a sharp pungent odor and taste, so table mustard tends to irritate the oral mucosa.
