This spice has always been quite cheap, so it quickly gained popularity and began to be used in cooking around the world. Savory is especially popular in Bulgaria, where almost all dishes are seasoned with it. They also love it in Mediterranean cuisine. Savory has a fairly strong taste and smell, which can dominate over other spices and can overwhelm the taste of the main dish, so it should be used carefully - strictly according to the recipe, then the dish will smell fragrant and have a pleasant bitterness. Based on this feature, the spice is ideal for legume dishes, making the taste richer and spicy. It is worth adding it at the end of cooking so that the dish does not become bitter. Savory is used when preparing fish, meat, broths, canned food, sausages and pates. The spice is added to marinades and sauces to make them more spicy and aromatic. Savory is suitable for preservation and pickling. The spice goes well with mushrooms, potatoes and other vegetables, which is why it is added to savory pies, stews and casseroles. Vinegar or vegetable oil is infused with savory, after which it is excellent for dressing salads. Modern research confirms the medicinal properties of savory, and medicine officially recognizes this plant as medicinal. The spice perfectly fights bacteria and fungi, has analgesic and healing properties. Using the spice is useful for digestion, increases appetite, relieves flatulence, helps digest food, kills pathogenic bacteria, has anthelmintic properties, relieves spasms and colic.
