The spice asafoetida is obtained from the milky juice of the root of the ferula plant. Ferula grows in Afghanistan, Iran, Tajikistan, and India. This spice is extracted in a very interesting way. The found plant is stripped of its leaves, dug up and covered with a stone. After about a month, the root is opened and cut. At the site of the cut, juice emerges from it, which becomes latex under the influence of air and temperature. This latex is collected and ground. Thus, up to 1.3 kg of harvest can be harvested from one plant.

The small amount of spice obtained and the labor-intensive method of collection make asafoetida such an expensive spice. Asafoetida has a strong odor that is both reminiscent of onion and garlic. For this reason, it received the unflattering names “smelling resin”, “bad spirit” and even “damn feces”. But it is precisely for the pungent smell and taste that connoisseurs love asafoetida. It helps digestion and prevents flatulence.
